These salmon bowls satisfy the asian cravings I get for sushi, even though the salmon is cooked. It has all the flavors I love melded together in a bowl. I used the salmon marinade and glaze from a recipe on HungryHappens.net called Killer Crack Salmon Muffins. But I made it into the bowls on the HungryHappens.net called Crispy Spicy Salmon Bowls. I thought the marinade would be wonderful and didn’t want to miss out on salmon cooked that way. I omitted the salmon caviar in the bowl, because I just don’t use that kind of ingredient very often. Maybe I will include one day. The bowls are excellent without!
Salmon Bowls
This recipe uses a marinated, cooked salmon in a sushi rice bowl with avocado, carrot, green onion, nori and spicy mayo.
Ingredients
Salmon Marinade
- 1 lb salmon, skin removed and cubed into small pieces
- 2 tbsp olive oil
- 1 tbsp sesame oil
- 1 tbsp soy sauce I used low sodium
- 1 tbsp rice vinegar I use unseasoned, natural
- 1 tbsp honey
- 3 cloves freshly minced garlic
- 1 tbsp freshly minced ginger
- 1 tbsp sesame seeds
- 2 scallions, chopped fine
Glaze
- 1 tbsp sesame oil
- 2 tbsp honey
- 2 tsp soy sauce
- 1 tsp sriracha sauce
- 1 tsp freshly minced ginger
- 1 tsp sesame seeds
Sushi Rice
- 1.5 cups sushi rice
- 2 tbsp rice vinegar I used unseasoned, natural
- 1 tsp sugar less, if desired
- ½ tsp salt i use redmond's brand
Spicy Mayo
- ½ C mayonnaise
- 2 tbsp sriracha sauce
Salmon Bowl
- 1 avocado, sliced
- 1 small carrot, grated or julienned
- 2 small persian cucumbers
- 2 scallions, diced
- 3 sheets nori, sliced into thin strips
- 1 tbsp sesame seeds
Instructions
Marinate the Salmon
- Remove the skin from the salmon. Cut the salmon into small cubes and place in a glass pyrex dish. Add the salmon marinade ingredients to the dish and stir to coat the salmon. Refrigerate until ready to cook.
Make the Glaze
- Combine all glaze ingredients in a small bowl and refrigerate until ready to use.
Make the Spicy Mayo
- Combine the ingredients in a small bowl and refrigerate until ready to use.
Make the Sushi Rice
- Cook the rice according to instructions. Stir in the sushi rice ingredients until combined.
Bake the Salmon
- While the rice is cooking, preheat the oven to 400 degrees and bake the salmon cubes in the marinade until cooked. Then broil the salmon a little to get it a bit crispy on top. Takes only 10 minutes or so.
- When cooked, remove from the oven and cover with the glaze.
Assemble the Bowl
- Slice the avocado, and sprinkle with lime juice and salt, if desired
- Jullienne or grate the carrot.
- Slice the cucumber thinly
- Cut the nori into thin strips about 4-5" long.
- Put sushi rice into a bowl. Top with salmon, avocado, carrot, cucumber. Sprinkle the nori and sesame seeds on top and drizzle with the spicy mayo.
