This sauce is wonderful in soups! It takes a soup, like a lentil soup, to the next level when your bowl is drizzled with this crema. You think you seasoned your soup to perfection while cooking it, but believe me, you need this!
There are alot of pepita crema recipes out there, the main ingredients of pepitas (or raw pumpkin seeds) and lime are a basic start to vegan sauces. I have always made it with some type of spicy pepper in it, though – it can be serrano or jalapeno or whatever you have. I have even seen recipes that use pickled jalapenos, but I like fresh peppers.
Pepita Jalapeno Crema
A wonderful topping for soups, tacos, or anything that needs a little spice
Equipment
- 1 blender Vitamix is recommended
Ingredients
- 1 C raw pepitas / pumpkin seeds If using a vitamix, no need to soak the pepitas. Otherwise, soak in hot water for 10 minutes and drain.
- 1 C water
- 1 jalapeno, seeded
- 2 limes, juiced
- 1 C fresh cilantro can be omitted, but recommended
- 1 tsp salt optional
- ½ tsp cumin optional
- ½ tsp smoky paprika optional
Instructions
- Add all the ingredients to the blender and mix into a luscious sauce. Add a little more water until consistency desired is achieved.
