A Most Flavorful Salsa Recipe

This fresh salsa recipe is great for the family. Its a mild recipe but very flavorful. When I first read the recipe in a small paperback grocery store recipe book, it called for a fresh jalapeno, but I never use one. The salsa recipe was the only recipe I used from that little paperback book, and I have long since gotten rid of the book, so I’ll take credit for this recipe.

I sometimes have troubles finding large cans of Herdez Salsa Casera, so I use the equivalent amount from the smaller 8 oz. cans, which seem to be easier to find. Use the cans, not the bottles of Herdez Salsa Casera. If I can’t find Herdez brand, I have used Rotel. I believe the original recipe called for Rotel.

Ingredients

  • 2 28 oz cans Herdez Salsa Casera
  • 2 Anaheim peppers, fresh
  • 1 bunch green onions
  • 2 cloves fresh garlic
  • 1 lime
  • ½ bunch fresh Cilantro
  • 2 Tbsp Olive Oil

Instructions

  • Empty the contents of Herdez Salsa Casera cans in a large mixing bowl
  • Seed and chop the fresh Anaheim peppers into small pieces and add to the bowl
  • Chop the green onions, including the tops, and add to the bowl
  • Use a garlic press to mince and add the garlic to the bowl
  • Cut the lime in half and squeeze the lime juice into the bowl, using a handheld juicer or by sticking a fork into the lime half, squeezing and routing the fork around to juice.
  • Remove the leaves from the stems of the fresh cilantro and chop the cilantro leaves and add to the bowl
  • Add the olive oil to the bowl
  • Mix the ingredients and chill for 15 minutes before serving, if you can wait that long to eat it!

I remember you making this many years ago when you first moved to SLC. You accidently touched your eye lids and I think you were in a lot of pain for a (short) period of time. 🙂

Note to self: don’t touch your face while making this killer salsa!
